Blueberry muffins are perennial favorites, but don’t think you need to stick to the same old recipe. A whole range of different muffins can be made from the one recipe.

Lemon Blueberry Muffins

You will need:

  • 1 basic muffin recipe
  • 1 tablespoon grated lemon zest

Lemon Glaze

  • 1 tablespoon fresh lemon juice
  • ½ cup powdered (icing) sugar

How to make

Follow the steps to make the blueberry muffin batter. To the batter add the grated lemon zest. Bake according to directions.

To make the glaze combine sufficient lemon juice with powdered sugar in a small bowl until you have the correct consistency.

When your muffins have cooled drizzle the glaze over the top. Scoop up in a spoon then simply drizzle the lemon glaze in a zig-zag pattern over the muffins.

Blueberry Streusel Muffins

You will need:

1 basic muffin recipe

Streusel Topping

  • ¼ cup all-purpose / plain flour
  • ¼ cup slivered almonds, chopped
  • 1 tablespoon brown sugar
  • 1 tablespoon butter, melted

How to Make

Prepare muffin mixture until the baking stage.

To make streusel topping:

Combine flour, almonds, brown sugar in a small mixing bowl. Melt the butter in the microwave and add to the dry ingredients.

Mix together then sprinkle the streusel over the muffins. Bake according to directions.

Blueberry Cinnamon and Nut Muffins

Blueberry Cinnamon and Nut Muffins

You will need:

  • 1 basic muffin recipe
  • 1 teaspoon cinnamon
  • 1/3 cup pecan nuts, roughly chopped

How to make

Replace the nutmeg with the cinnamon. Add the chopped pecan nuts when you add the blueberries. Bake as directed.

You don't of course have to use our blueberry muffin recipe. These variations can be adapted to any muffin recipe.
